Royal Abbey of Cong and Ashford Castle are good opportunities to explore the local culture. Take a break from the city and head to Kayaking & Canoeing and Galway Bay. You'll find plenty of places to visit near Galway: Killary Fjord (in Leenane), Burren National Park (in Corofin) and Burren Birds of Prey Centre (in Ballyvaughan). There's still lots to do: take in the awesome beauty at Croagh Patrick and contemplate the long history of Poulnabrone Dolmen.
