Eschew the tourist crowds and head to Joyce Country Sheepdogs and Rathcroghan Royal Site & Visitor Centre. You'll find plenty of places to visit near Galway: Dog's Bay Beach (in Roundstone), O`Dalaigh Jewellers (in Clifden) and Royal Abbey of Cong (in Cong).
